Abstract

Minuman bersantan merupakan produk minuman tradisional yang banyak dikonsumsi masyarakat Indonesia. Jenis minuman bersantan yang dijual pedagang kaki lima diantaranya ialah es dawet, es daluman, es cincau dan lain sebagainya. Cemaran bakteri pada minuman dan makanan menunjukan bahwa minuman dan makanan tersebut telah terkontaminasi oleh tinja. Penelitian ini bertujuan untuk menilai kualitas minuman bersantan pada pedagang kaki lima. Penelitian ini merupakan penelitian literasi. Literatur penelitian ini menggunakan 13 jurnal yang sesuai dengan criteria literature yaitu rentang waktu yang digunakan antara 2010-2020. Jurnal disaring berdasarkan penelitian judul jurnal, Abstrak, hasil, metode, dan kata kunci yang sesuai dengan penelitian. Berdasarkan kajian literature review dari 13 jurnal menunjukan bahwa sebagian besar minuman bersantan pada pedagang kaki lima tidak memenuhi syarat keamanan pangan karena cemaran mikroba pada minuman bersantan melebihi batas maksimum yang ditetapkan BPOM. Kata kunci: Uji bakteriologi, Escherichia coli, ALT, MPN, minuman bersantan Coconut milk is a traditional beverage that is widely consumed by Indonesians. The types of coconut milk drinks sold by street vendors include dawet ice, daluman ice, grass jelly, and etc. Bacterial contamination in drinks and food indicates that these drinks and food have been contaminated by feces. This study to assess the quality and eligibility for consumption. This research is a literacy study. This reseach literature uses 13 journals that meet the criteria pf the literature, namely the time span used between 2010-2020. Journals are filtered based on research journal titles, abstrack, result, methods, and keywords that are relevant to the study. A review of the literature review of 13 journals shows that the majority of soft drinks in street vendors do not meet food safety requirements because the microbial contamination of soft drinks exceeds the maximum limit set by BPOM.
