Abstract

The main cause in the process of distributing mangosteen for export purposes is how to maintain the quality of the mangosteen fruit in order to remain good when it arrives in the destination country given the long delivery time. Efforts that can be done are coating using beeswax (beeswax), chitosan or a combination. Beeswax is a pure candle formed from honeycomb originating from Apis Mellifera bees. Beeswax is used as a coating of mangosteen fruit to extend shelf life and maintain the physical quality of mangosteen during storage.Chitosan can be used as a preservative because of its properties, which can inhibit the growth of destructive microorganisms while coating preserved products so that minimal interaction between the product and its environment occurs. The concentration of combination coatings used is a ratio of 1: 1, 1: 2 and 2: 1. The decrease in the physical quality of mangosteen was observed by looking at the percentage shrinkage of mangosteen weight, visual appearance and reducing sugar content during the storage process using the Nellson-Somogy method. The results showed that the percentage of mangosteen fruit shrinkage was significantly different until the 10th day and on day 11-14 it did not differ significantly, the increase in reducing sugar content in the coating and without coating for 7 and 14 days of storage was significantly different.
