Abstract

Cabbage is one of vegetables that has many content such as vitamin A and vitamin C. Vitamin C (ascorbic acid) is a water soluble vitamin, which is used by the body to form kalogen in bone, cartilage, muscle, blood vessels and helps in absorption of iron, as well as a source of antioxidants. This study aims to determine whether there is vitamin C in cabbage and how much vitamin C in cabbage (Brassicae oleracea var Capitata L.) is based on small, large and medium size by UV-vis spectrophotometry. Vitamin C testing includes qualitative and quantitative tests by using KMnO4, FeCL3 and iodine refrigeration, reagents will fade when oxidation reacts with vitamins. Quantitative test using UV spectrophotometric method, ascorbic acid wavelength is 265.8 nm Based on the results of research known that each cabbage has vitamin C different. The greatest result of vitamin C is found in small cabbage that is 0,02 ± 2,5x10-4% that difference can occur due to the size factor, the taking time, the season, and the intensity of the sun so that the content is obtained differently.
