Abstract

Oil is a food substances that is essential for maintaining the health of the human body. Repeated use of palm cooking oil will be damaged if affected by repeated heating, contact with water, air, and metal. Oil damage can be prevented by adding antioxidants, because it can inhibit the oxidation process, especially oildamage. This research uses shallot extract as a natural antioxidant. Before palm cooking oil is used for frying, it is set as a control without 24 hours storage (PO) and with 24 hours of storage (P024). Palm cooking oil used to fry soybean cake with frying repetition first, second, and third. Treatments with the addition of shallot extract and without shallot extract. Determination of peroxide on the repeated use of palm cooking oil done by Iodometry method. The results were obtained peroxide number onpalm oil as a control without 24 hour storage (P0) and control the storage of 24 hours (P024) is 1.79 meq O2 / kg and 2.92 meq O2 / kg, then the treatment of palm cooking oil without shallot extract at P1, P2, P3 was 9.72 meq O2/ kg, 11.11 meq O2/ kg, 12.35 meq O2/ kg, while in treatment palm cooking oil with the addition of shallot extract P1, P2, P3 was 5.29 meq O2 / kg, 6.63 meq O2 / kg, 9.19 meq O2 / kg. The results proved that there is a real influence among palm cooking oil without the addition of shallot extract and with the addition of shallot extract.
