Dates is one of the material food that preferred enough in Indonesia,especially when hajj season and ramadhan come. Industri usually save kurma in -30 C for one year. After packing time, dates distributed to market. dates has a shelf life of 2 years at room temperature to 250 C. The quality of dates affected by storage conditions, because characteristics of dates may be different after the hands of consumers. In the hands of rogue manufacturers that can lasts longer they abuse borax as a preservatives . The aims of this research is to know the levels of borax on dates with UV- vis spectrophotometric method. Borax extraction of the sample dates with how centrifuged at 3000 rpm for 2 minutes and then taken part supernatant . Identification of borax in the supernatant was conducted qualitatively by using a color reaction test is a flame test using sulfuric acid and curcumin, and quantitatively using UV - vis spectrophotometric The results of research on a sample of dates borax levels A, B , C and successively is 2.624 µg/gram, 3.574 µg/gram, 2.016 µg/gram, 18.796 µg/gram.
