Abstract

Beta carotene is a provitamin A most important for humans. Beta Carotene is formed from two molecules of vitamin A. Sources of provitamin A is lots of beta carotene in the plant-based materials that are green , orange or red. Provitamin A very sensitive to oxidation , onto - oxidation and light , but very stable in the heat in an inert atmosphere ( free O2 ) . Testing of Beta Carotene include qualitative and quantitative test. Qualitative test using TCA reagent produce blue-green color. Quantitative test using UV- Vis spectrophotometry, beta carotene wavelength is 463 nm. According to the research levels of beta carotene carrots original sample is 0.0868 %; carrots stored in open air amounted to 0.0252 %; levels of beta carotene in carrots stored in a refrigerator is 0.0394 %; while the levels of beta -carotene in carrots stored in black plastic is 0.0582 % Keywords : Beta -carotene , carrots , UV - Vis spectrophotometry
