Abstract

Super red dragon fruit peels (Hylocereus costaricensis) contains antioxidant compound called flavonoid, polyphenol, and saponin. Super red dragon fruit peels is waste that has not been utilized optimally. The aim of this research is to determine the effect of a combination of citric acid and sodium bicarbonate on the physical properties and antioxidant actifity from effervescent tablet super red dragon fruit peels exctract. Super red dragon fruit peels exctract was made with maceration method used etanol 70%. The exctract were made as much 5 formulation effervescent tablet with combination of citric acid and sodium bicarbonate then was analyzed for physycal properties including weight unformity, hardness, friability, taste perception, dissolution time and antioxidant activity using DPPH method. The results showed that the differences of citric acid and sodium bicarbonate concentration would effect the characteristic of tablet there was dissolution time and taste perception. Taste perception analysis showed F4 anf F5 having the preferred formulation. F3 having the best formulation with highest antioxidant activity 393,380 ppm, with speed-soluble 1,59 minute, and percentage of taste responses 75%.
