Abstract

Vitamin grouped into two, namely fat-soluble vitamins (vitamins A, D, E and K) and water-soluble vitamins (vitamin B complex and C). Vitamin C also called ascorbic acid is a vitamin that is needed by the body and serves to boost the immune system which can be obtained from fruits and vegetables such as tomatoes. This research method using UV-Vis spectrophotometry to examine the levels of vitamin C in tomatoes. The method that used to detect levels of ascorbic acid in sample is by color complex of iodine-starch based of principles retitration reaction with ascorbic acid as a reductant of I2. Absorbance I2 at the beginning reduced by residual I2 so that we obtained the I2 that reacted with ascorbic acid. The final absorbance then inserted into the linear regression equation then we obtained Creg to be converted to the calculation of the content of ascorbic acid. Samples of raw tomatoes levels by 0.39% (g / g), boiled tomato sample levels of 0.57% (g / g), while the content of the fried tomato samples was not detected because the absorption of vitamin C uptake obtained under the detection limit. Based on the results it can be seen that ascorbid acid can be affected by different treatments and treatment temperature. Keywords: Vitamin C, UV-Vis spectrophotometry, tomatoes.
