Abstract

It has been proven that kersen fruit has antioxidant activity because it contains flavonoids and vitamin C. The extracted kersen fruit is made in the form of gel. The objective of the study is to determine whether the different concentration of kersen extract has an effect on physical characteristic and stability of gel , to know the best extract concentration, and antioxidant potency in gel. Kersen fruit was extracted by maseration method and then condensed with rotary evaporator. The gel were made in 5 formulas: formula 1, 2, 3 each of them contained 5%, 10%, 15% kersen fruit extract. Formula 4 as negative control and formula 5 as positive control. Antioxidant activity was tested by DPPH method, then observed its physical characteristic include homogeneity, spreading capacity, adhesion, viscosity, pH and stability. Including the results of study showed that kersen fruit extract had an effect on physical characteristic and stability of gel. The higher concentration of extract in the gel resulted smaller viscosity and spreading capacity, but greater adhesiveness and better homogeneity. The IC50 value of kersen fruit extract was 89,625 ppm. The antioxidant activity test result of gel extract showed that the value of formula 3 were as 109,621 ppm. The test results showed that there were potency antioxidant activity as low. Keywords: Kersen fruit extract, gel, antioxidant
